OATMEAL CHOCOLATE CHIP COOKIES

I spent some time this afternoon baking clean treats for the week; it’s become a ritual that I actually look forward to these days. Today’s triumph are THESE oatmeal chocolate chip cookies! I’ve found that these cookies are a great snack to have on-hand because, well, first of all they are cookies, secondly, they contain chocolate, and lastly they are low sugar and energy rich. One cookie really satisfies the need for something carby and sweet! They take 5 minutes to prepare. Give them a try and let me know what you think!

 

Recipe:

3 cups oat flakes
2 cups oat flour
1 tsp baking soda
1 tsp baking powder
2 tsp cinnamon
1 cup unsweetened applesauce
1 cup sucanat or sweetener of choice
2 large eggs
3 tbsp milk
1.5 tsp vanilla
1.5 cup chocolate chips

 

Directions:

  1. Preheat oven to 350 degrees
  2. In large bowl, combine oats, flour, cinnamon, baking soda and baking powder
  3. In separate bowl, mix together sucanat, eggs, milk and vanilla
  4. Gradually beat in dry ingredients until blended
  5. With spatula, fold in chocolate chips
  6. Roll dough into generous 1 inch balls and drop 3 inches apart onto cookie sheet
  7. Gently flatten each ball with a fork
  8. Bake for 12 to 15 minutes and ENJOY!!!
