Wholesome Chicken Soba Bowl!

I LOVE soba noodles. Did you know that a diet rich in buckwheat (the grain used to make soba noodles) can help lower your blood pressure and cholesterol levels? Buckwheat is high in flavonoids (antioxidants that protect your levels of good cholesterol from free radicals) and magnesium (a mineral that works to lower your blood pressure and improve your blood flow).

So with THAT… I present to you this flavourful soba noodle recipe!

 

Recipe:

3 tbsp freshly squeezed orange or orange juice
1 tbsp lemon juice
1 – 2 tbsp organic honey (depending on how sweet you want it!)
1 tbsp soy sauce
1 tbsp sesame oil
1 serrano pepper, seeded and minced
2 tsp minced lemongrass
2 tsp minced ginger
Salt to taste
1 pound chicken breast
6 ounces soba noodles
2 cups sliced shiitake mushrooms, stems removed
3 cups broccoli florets

 

Directions:

  1. In large bowl, whisk together orange juice, lemon juice, honey, soy sauce, sesame oil, serrano pepper, lemongrass, ginger, and salt
  2. Dice chicken breast
  3. Lightly boil broccoli (approximately 3-5 minutes)
  4. Heat a teaspoon of sesame oil in skillet and saute chicken
  5. Add-in sauce and cook chicken on medium heat until tender
  6. Add-in broccoli and mushrooms, mix lightly, and put on low-heat
  7. Cook soba noodles in a pot of boiling water for approximately 6-8 minutes (follow directions on package)
  8. Rinse noodles under cold water
  9. Put noodles in a bowl, top with chicken and veggies, and ENJOY!!! 🙂
