Spicy Chickpea Curry!

Here is a fantastically-flavourful recipe that takes minutes to prepare! It’s one of my staples when I’m tight on time but feel like something warm and soulful.

Hope you enjoy it as much as I do!

 

Recipe:

2 tbsp extra virgin olive oil
1 1/2 medium onions, minced
1/2 medium onion, sliced
3 garlic cloves, minced
3 tsp fresh ginger, grated
1/4 tsp ground cloves
1 1/4 tsp ground cinnamon
3 tsp coriander
2 tsp cumin
2-3 tsp cayenne (depending on how hot you want it!)
3 tsp turmeric
sea salt to taste
30 oz chickpeas (2 cups)
14 1/2 oz diced tomatoes (canned w/juices)
1 cup fresh cilantro

 

Directions:

  1. Saute onions in oil til tender. Add garlic, ginger, and spices and saute for an additional 1-2 minutes
  2. Add chickpeas, tomatoes w/juices
  3. Simmer 30 minutes
  4. Stir in cilantro
  5. Serve with brown rice or quinoa, and a side of plain yogurt!
