Sirloin & Carrot Mango Slaw!

As promised, here is the recipe for the delicious meal we had over the weekend! I can’t tell you how amazing the flavours were – savoury, sweet, and tangy all at the same time! SO GOOD!



3 tbsp low sodium soy sauce
3 tbsp sucanat or brown sugar
2 tbsp sesame oil
2 tbsp lime juice
2 large cloves garlic, minced
1 tbsp minced ginger
3/4 tsp each sea salt and pepper
1 lean sirloin tip roast (approx. 2 pounds)

Carrot-Mango Slaw
2 carrots, julienned
1 mango, julienned
1/4 cup chopped fresh mint
1 clove garlic, minced
2 tbsp rice vinegar
1 tbsp olive oil
3/4 tsp salt
Pinch freshly ground black pepper



  1. Meat: Preheat oven to 450 degrees. Stir together soy sauce, sugar, oil, lime juice, garlic, ginger, salt, and pepper. Place steak in marinade and coat well. Wrap and refrigerate for a minimum of 1 hour (up to 24 hours)! Place roast on rack in roasting pan and place in oven for 10 minutes. Reduce heat to 275 and cook for about 1.5 hours or until meat reaches 145 degrees fahrenheit. Remove from oven, cover loosely, and let stand for 10 minutes before slicing thinly.
  2. Salad: Mix together mint, garlic, vinegar, oil, salt, and pepper. Julienne the carrots and mango, and mix together with wet ingredients! Garnish with additional pepper if desired.
