Scrumptious Stuffed Peppers!

Here is a delicious clean recipe that will knock the socks off any dinner guest! These peppers are savoury, filling, and full of clean ingredients. Feel free to get creative with the ingredients… the options are limitless! 🙂



4 large peppers
2 tbsp olive oil
1 1/2 cups cooked brown rice or quinoa
1 pound lean ground turkey
2 egg whites
1 cup clean marinara or tomato sauce
2 stalks of celery, finely chopped
1/2 cup finely chopped mushrooms
2 cloves garlic, finely chopped
1/2 white onion, finely chopped
1/3 cup grated Parmesan cheese
2 tbsp italian seasoning
1 tbsp chili flakes
1 tbsp sea salt
1 tsp garlic powder
1/2 tsp black pepper



  1. Preheat oven to 350 degrees
  2. Lightly drizzle heated pan with olive oil
  3. Add onion, mushrooms & celery and cook until they begin to soften, then add garlic & spices.
  4. Cut top off peppers and remove all seeds and ribs
  5. Lightly coat peppers with olive oil and place in baking dish
  6. In large bowl, mix together ground turkey, egg whites, cooked brown rice / quinoa, marinara sauce, and veggie mixture
  7. Stuff mixture into peppers and sprinkle with parmesan cheese
  8. Place in oven and cook for 45 mins – 1 hour
  9. Remove and let cool for a few minutes
  10. ENJOY!!! 🙂
