Lean Mean Turkey Chili!

This is one of my go-to meals during the cold winter months! It totally satisfies the need for warm goopey goodness, without being high in fat OR calories!

To satisfy the brown-girl in me, I tend to add a little extra chili powder. It works as a great base for other recipes… so feel free to get creative!

Recipe:

1 tbsp olive oil
1 pound extra lean ground turkey
2 tbsp chili powder
½ tsp paprika
½ tsp cayenne pepper
1 tbsp ground cumin
Handful fresh oregano, chopped (OR 2 tbsp dried oregano)
1 large yellow onion
2 garlic cloves, minced
2 jalapenos, de-seeded and sliced
4 cups peeled / chopped roma tomatoes (OR 1 28 oz can crushed tomatoes)
2 – 4 cups kidney beans (depending on preference)
1 red pepper
1 green pepper
1 cup water

 

Directions:

  1. Heat olive oil in a pot over medium heat
  2. Place turkey in pot and cook until evenly brown
  3. Stir in onion and cook until tender
  4. Add water and garlic into pot and allow to simmer for a few minutes
  5. Mix in tomatoes, kidney beans
  6. Season with chili powder, paprika, cayenne pepper, ground cumin, and oregano
  7. Add in red pepper, green pepper, and jalapenos
  8. Allow to simmer for 20 – 30 minutes
  9. ENJOY!!! 🙂
