Healthy Pasta Salad!

Barbecue season is upon us, so it’s time to start being strategic about our summer food choices! Skip the creamy potato salad and opt for this quick and easy pasta salad recipe. It tastes great, it’s high in fiber, and best of all, it’s healthy!

 

Recipe:

3/4 cup uncooked brown rice fusilli
3 1/2 tablespoons fresh lemon juice
1 tbsp extra-virgin olive oil
1 tsp sea salt
1/2 tsp minced garlic
1/4 tsp honey
1/4 tsp freshly ground black pepper
1 cup shredded cooked chicken breast
1/2 cup diced cucumber
1/2 cup chopped red bell pepper
1/3 cup thinly sliced green onions
1 tbsp chopped fresh dill
1/2 cup crumbled goat cheese

 

Directions:

  1. Boil brown rice fusilli according to package directions
  2. Rinse pasta with cool water and set aside
  3. Mix together wet ingredients, seasoning, and shredded chicken breast
  4. Toss mixture with pasta, cool in refrigerator, and ENJOY!!! 🙂
