Healthy Chicken Salad!
Here is a quick and easy summer lunch recipe! Eat the salad as-is, or stuff it in a wrap with some additional fixins like lettuce or hot banana peppers! If you prefer more of a sweet / savoury combo, consider adding in some apple and dried cranberries instead of the potatoes and celery!
1 pound cooked chicken breast (I like to add some flavour to mine using greek or italian seasoning!)
1/2 cup diced red onion
1 1/2 cup chopped cooked red potatoes
1/2 cup greek yogurt
1/2 cup diced celery or cucumber
1 1/2 tbsp lemon juice
1 tsp garlic powder
freshly ground pepper to taste
salt to taste
- Chop, dice, or shred cooked chicken
- Combine chicken, onion, celery / cucumber into a bowl
- Mix in yogurt, lemon juice, garlic powder, salt, pepper
- Mix well and ENJOY!!! 🙂
