Ginger Chicken!

Bored of the same old grilled chicken recipes?! Well look no further, this delicious recipe is sure to hit the spot! Serve it up on a bed of brown rice, quinoa, or veggies… and then shred up the leftovers (assuming there ARE any) and toss them in a salad! MMM!

 

Recipe:

4 4-oz chicken breast
Olive oil cooking spray
2 tbsp tamari or low-sodium soy sauce
1 1/2 tbsp lime juice
1 tbsp raw honey
2 tbsp fresh ginger, grated
2-3 cloves garlic, minced
1/2 tsp hot pepper sauce (i.e. sriracha)
4 4-oz chicken breast

 

Directions:

  1. Preheat oven to 350 degrees
  2. Coat baking sheet with a thin layer of cooking spray
  3. In a bowl, whisk together all of the ingredients and coat chicken breast
  4. Place on baking sheet and cook for 20-30 minutes (until chicken is fully cooked)
  5. Remove from heat and ENJOY!!! 🙂
