Chunky Guacamole!

With all the “guacamole talk” that was going on yesterday, I thought I’d share with you one of MY favourite guacamole recipes! It’s easy to make, has a nice kick to it, and can be modified to suit any pallet.

4 ripe avocados
1/4 cup thinly sliced cherry tomatoes
2 tablespoon finely chopped red onion
1 jalapeño or serrano pepper, seeds removed and finely chopped
Coarsely chopped cilantro, to taste
2 cloves garlic, finely chopped
Juice of one half lime
1/2 teaspoon each cumin and chili powder (or to taste)
Salt and pepper, to taste

  1. Combine all the ingredients except the avocados, salt and pepper
  2. Allow ingredients to sit for approximately half an hour
  3. Mash avocados with fork so that there are still whole pieces of avocado
  4. Gently fold into other ingredients
  5. ENJOY!!! 🙂
