Quick & Easy Arugula Shrimp Salad!

Here is another fresh salad recipe for you to try! In case you don’t like shrimp, feel free to substitute it with chicken or flank steak. I’ve tried both alternatives and they taste GREAT! 🙂

 

Recipe:

arugula
cooked shrimp
grape tomatos 
yellow pepepr
2 tbsp freshly squeezed lemon juice
1/4 – 1/2 tsp minced garlic (vary according to taste)
1/2 tsp dijon mustard
1/2 tsp sea salt
1/4 tsp ground black pepper
4 tbsp extra-virgin olive oil
lightly shaved parmesan for garnish

 

Directions:

  1. Mix together lemon juice, garlic, mustard, sea salt, black pepper, and olive oil (either whisk by hand or shake in bottle)
  2. Arrange arugula, shrimp, and veggies on plate
  3. Drizzle with dressing
  4. ENJOY!!! 🙂
